Crystal dumplings is one of the most famous dim sum dishes. It is soft and slightly chewy almost translucent crystal skin with juicy fillings. It’s easier to make than you think.

Ingredients:
  • Dumpling Wrapper
  • 5.25 oz. Shrimp Dumpling Flour (Har Gow wrapper flour)
  • 1 oz. Boiling Water
  • Fillings
  • 1 lb. Ground Pork
  • 1 tsp. Salt
  • 1 tsp. Sugar
  • 2 tsp. Sesame Oil
  • 2 tsp. Chopped Scallion
  • 0.25 cup Finely Chopped Carrots, Mushrooms
  • 0.25 cup Green Pea, Corn
  • 0.25 cup Finely Chopped Reb Bell Pepper, Bean Curd, Green Beans, Mushroom, 1/4 Cup For Each

In a large mixing bowl, mix 5¼ oz / 150g Shrimp Dumpling Flour and 1 oz / 30g boiling water using a spatula or a large fork, mixing until no more dry flour in the bowl. Knead into a neat dough. Cover with a plastic wrapper, rest for 15 minutes.

shape the dough into a long log( about 1.5-inch in diameter), then divide the long log into about 1.5-inch long small piece and shape those small pieces into balls. press the balls into flat circles. roll each circle into a larger and thinner round wrapper.

in a mixing bowl, combine ground pork, salt, sugar, sesame oil, and minced green onion, blend completely.

place a small amount of pork mixture at the center of the wrapper, fold the wrapper and snap together at the top, then take the other two sides snap together at the top as well, carefully form four small pockets on top, put a small amount other ingredients inside each pocket. (if you use minced green vegetables, minced shiitake, minced ham, and minced scrambled eggs in one dumpling, you’ll get four happiness dumpling.)

place the dumplings in a steamer, steam for 8 minutes.

Shrimp Dumpling Flour (Har Gow wrapper flour) is available in most Chinese supermarket. For substitute, you can combine the wheat starch (3.5 oz / 100g) and tapioca starch ( 1.75 oz / 50g).
