Combine flour, salt, and water in a mixer fitted with the paddle or in a bowl.

Mix together, then knead 5-8 minutes until dough is smooth.

Remove the dough from the mixer and wrap. Rest and chill dough 30 minutes to overnight.

Mix butter and flour together in the bowl of a stand mixer fitted with a paddle or in a bowl with a wooden smooth. Mix until smooth, but don’t aerate.

Using plastic wrap or parchment paper, shape butter mixture into a 6” x 6” square.

If the butter isn’t soft, do the first turn: roll dough to 6” x 16”, then fold in thirds like a letter. Repeat for a second turn, then chill in the fridge 30 minutes. Repeat twice, for a total of 6 turns, resting in the fridge between every two turns.

After 30 minutes’ rest following the sixth turn, roll dough to ¼” thickness.

Bring caramel ingredients to a boil in a saucepan, then pour into 10” skillet or cake pan lined with parchment paper.

Core and peel apples, then cut into eight pieces. Arrange in a concentric circle in the pan.

When ready to bake, cut puff pastry into a round and place on top of apples (puff pastry should be just out of the fridge when you bake it.)

Bake in a 200°C / 400°F oven 10 minutes, then lower oven to 190°C / 375°F and bake until pastry is golden brown, about 20 minutes more.

Cool 15 minutes, then flip onto plate, wait another 5 minutes to cool slightly, then slice and serve with vanilla ice cream.
