  • 4 small Eggs
  • 2 tbsp. Milk
  • 0.25 tsp. Salt
  • 0.25 tsp. Black Pepper
  • 2 tsp. Olive Oil
  • 1 medium Avocado
  • 0.3 cup Tomato
  • 1 sprig Green Onion
  • 1 clove Garlic
  • 0.3 cup Apple
  • 1 cup Mixed Greens
  • 0.25 cup Walnuts
  • 1 tbsp. Raisins
  • For salad
  • 0.25 tsp. Salt
  • 0.2 tsp. Black Pepper
  • 2 tsp. Balsamic Vinegar
  • 1 tbsp. Olive Oil
  • 1 tbsp. Olive Oil
  • 2 tbsp. White Wine
  • 0.25 tsp. Salt
  • 0.2 tsp. Black Pepper
  • For cooking eggs
  • 1 tbsp. Olive Oil
  • 2 tbsp. Parmesan Cheese
  • For garnish
  • 1 tbsp. Parmesan Cheese

In a small bowl, whisk together 4 small eggs, milk, salt, pepper, and olive oil.

Peel the avocado and remove the pit, then dice into small cubes.

Do the same for the tomato and green onions, and mince the garlic. Place the prepared vegetables on a plate, and set aside.

Dice the apple, place into a bowl and add in mixed greens, walnuts and raisins.

Season with salt, pepper, balsamic vinegar and olive oil. Toss to combine.

Heat olive oil in a skillet over high heat, stir-fry the garlic, green onions, tomato, and avocado. When the vegetables give off a rich aroma, deglaze with white wine and season with salt and pepper.

Heat olive oil in a non-stick pan and pour in the egg mixture.

When the eggs have cooked into an omelette, sprinkle with parmesan cheese and add the vegetables. Fold the omelette in half over the vegetables, and remove from heat.

Transfer the omelette onto a plate, top with apple-walnut salad, grated parmesan cheese, and serve.
