Ingredients:
  • For Ribs Marinate
  • 2 racks Baby Back Ribs
  • 1 tbsp. Olive Oil
  • 1/2 tsp. Salt
  • 1/4 tsp. Ground Black Pepper
  • For Rib Stew
  • 1 tbsp. Olive Oil
  • 1/4 cup Scallions
  • 1 tbsp. Fresh Ginger
  • 5 cloves Garlic
  • 5 pieces Dried Red Chili
  • 3 pods Star Anise
  • 1 tbsp. Cooking Wine
  • tbsp. Sugar
  • 1 tbsp. Soy Sauce
  • 2 tbsp. Balsamic Vinegar
  • 2 cup Chicken Broth
  • 1 tsp. Salt
  • 1/2 tsp. Ground Black Pepper
  • For Kale
  • 1 tsp. Fresh Ginger
  • 2 cloves Garlic
  • 1 tbsp. Olive Oil
  • 2 handfuls Kale
  • 1/2 tsp. Salt
  • 1/4 tsp. Ground Black Pepper

Preheat the oven to 365°F/180°C.

Cut ribs apart into separate pieces, and place in a large bowl.

Add 1 tablespoon of olive oil, salt and pepper, and massage with fingers until all of the ribs are covered.

In a large skillet (that has a lid and can also go into the oven), heat up 1 tablespoon of oil, and fry the ribs until both sides are golden brown.

While ribs are cooking: Cut the scallions in 2-inch slices and add to ribs; cut off the outside skin of ginger, then thinly slice and then dice, and add to the ribs.

Peel garlic cloves and add to ribs. Add to the cooking ribs the red chili and star anise, then sauté.

Add cooking wine, sugar, soy sauce, and balsamic vinegar. Stir until the ribs are covered in the sauce and have a rich color.

Add chicken broth, and season with salt and black pepper. Then cook until boiling.

Place the lid on the pan and carefully put in the oven. Bake for 30 minutes.

While ribs are baking, cut off the outer skin of the ginger, thinly slice then julienne, set aside.

Peel garlic and thinly slice, set aside. In a large skillet, add 1 tablespoon olive oil and heat oil. Sauté ginger and garlic.

Cut stems off kale, then roughly chop kale into pieces.

Add kale to skillet, then stir-fry until kale has turned dark green. Add salt and pepper to taste.

When the ribs have finished baking, remove from the oven and let sit for 10 minutes to reduce the sauce.

On a serving plate, place the kale on the plate and stake the ribs on top of the kale, pour some sauce over the ribs.
