Juicy and savory Chicken roll-ups stuffed with all kinds of yummy things like shrimp, cilantro, ginger, green onion and wrapped in lotus leaf. You can prepare these roll-ups and freeze them for a few weeks before baking.

Ingredients:
  • 7 oz. Ground pork
  • 3 oz. Small shrimp, peeled
  • Marinade
  • 1 tbsp. Shaoxing wine
  • 0.5 tsp. Salt
  • 0.25 tsp. White pepper
  • 0.5 tbsp. Minced Ginger
  • 0.5 tbsp. Minced green onion
  • 2 tbsp. Minced cilantro
  • 1 tbsp. Minced carrot
  • 1 tbsp. Minced red bell pepper
  • 1 count Egg
  • 5 oz. Chicken legs
  • 0.5 tsp. Garlic Salt
  • 0.25 tsp. Black pepper
  • 0.5 tbsp. Corn starch
  • 1 piece Lotus leaf

In a bowl, combine ground pork, cooking wine, salt, white pepper, minced ginger, minced green onion, minced cilantro, egg, minced carrot, minced red bell pepper, and shrimp. Mix well.

Cut apart at the join of the chicken leg quarter, remove the thigh bone first, then remove the leg bone, keeping the meat in one piece. Prink small holes on the meat using the tip of your knife. Also, tenderize the lumpy parts to make the piece flat and even.

Sprinkle garlic salt, black pepper, and starch on chicken.

Evenly layer ground pork mixture on top of the chicken, and roll it up from one end.

Place the chicken on a lotus leaf. Wrap it like spring roll. Tie it with a string.

Bake at a preheated oven at 350°F/180°C for 40 minutes.
