Beef Noodle Soup with Tomatoes

Making egg noodles, follow the recipe here: https://www.tasteshow.com/product/braised-pork-belly-egg-noodles_6558.html. (You can purchase egg noodles at chinese grocery store.)

In a large pot, bring 4 to 5 cups of water to a boil, and submerge the beef shank in boiling water for a few minutes. Remove from boiling water and rinse with cold water. Set aside.

In a wok over high heat, add cooking oil, add green onion, ginger, peppercorn, star anise, cinnamon stick, bay leaves, black pepper, five-spice powder, rock sugar, cooking wine soy sauce, and water, bring to boil.

Add beef shank, lower the heat, cover, and stew for 90 minutes until it is soft. Remove from heat. Slice it into thin slides when it is cold and firm.

Bring 4 cups of water to a boil in a cooking pot, add egg noodles in, and cook for 5 minutes. Remove from pot and rinse with cold water. Place the noodles in a serving bowl. Set aside. (Tip: add a pinch of salt in the boiling water before add noodles to help the cooked noodles are chewier.)

In a cooking pan over high heat, add oil, tomatoes, stir-fry several times until fragrant. Then, add ketchup, beef bone broth, and a pinch of salt. Stir to mix well.

To serve: pour the tomato beef broth over the noodles in a serving bowl. Top with braised beef slices.
