Deep-fried beer-battered cod fillets, crispy on the outside and tender on the inside. Served with a refreshing salad and golden french fries on the side, this dish is the perfect balance between textures and flavors that will have your mouthwatering.

Ingredients:
  • 2 medium Potatoes
  • 1 tsp. Sea Salt
  • 2 pieces Cod Fillets
  • 1 tsp. Lemon, Juiced
  • 1/2 tsp. Sea Salt
  • 1/4 tsp. Ground Black Pepper
  • 1 cup Flour
  • 1/2 cup Corn Starch
  • 1/4 tsp. Baking Soda
  • 2 tbsp. Cognac
  • 1/2 tsp. Ground Salt
  • 1/4 tsp. Ground Black Pepper
  • 6 fl oz Beer
  • 1/2 tbsp. Corn Oil
  • 1 tsp. Corn Starch
  • 1/4 tsp. Ground Salt
  • 1 cup Salad
  • 1/2 tbsp. Olive Oil
  • 1/2 tsp. Lemon, Juiced
  • 1/2 tsp. Balsamic Vinegar
  • 1/3 tsp. Ground Salt
  • 1/4 tsp. Ground Black Pepper

Peel and cut the potatoes into sticks.

Add the potato sticks and sea salt in a saucepan with water and bring to a boil.

In a plate, marinate the cod fillets with lemon juice, sea salt and black pepper on both sides. Marinade aside for 10 minutes.

Remove the potato sticks with a strainer and transfer to a plate. Pat dry with paper towel, and set aside.

In a big bowl, add flour, cornstarch, baking soda, cognac, salt and black pepper. Mix in beer and corn oil into a batter then set aside.

Heat a pot of oil, coat the potatoes sticks with cornstarch, then deep fry at 170°C/340°F degree for 7-8 minutes.

After it's done, transfer to a plate with paper towel and season with salt.

Coat the cod fillet with batter, then heat another saucepan of oil and deep fry until golden brown. Transfer to a plate with paper towel and set aside.

Add the spring mix in a big bowl, season with olive oil, lemon juice, balsamic vinegar, salt and black pepper. Mix well and set aside.

Cut the fried cod fillet, then place it on a plate. Add salad to the side and fries on top of the fish. Garnish with edible petals, pea shoots.
