This is a great traditional breakfast idea for the family on weekends or holidays. The southern US classic savory biscuits served warm, have a soft crumbly texture that goes so well when topped with sausage gravy. A side of homemade hash browns makes this one of those brilliant recipes that taste amazing, look impressive, and take very little effort. A welcome addition to any breakfast. Note: A nifty trick when making your biscuits is to use the grater for your cold butter.

Ingredients:
  • ㅤBiscuits
  • 6 tbsp. Cold butter
  • 3 cup All-purpose flour
  • 1 tsp. Baking soda
  • tbsp. Baking powder
  • tsp. Sea salt
  • tbsp. Granulated sugar
  • cup Buttermilk
  • ㅤㅤ ㅤㅤFor Rolling The Dough
  • 1/4 cup All-purpose flour

  • 2 tbsp. Melted butter
  • 1/2 tsp. Coarse salt
  • ㅤ ㅤㅤㅤ ㅤ ㅤㅤㅤGravy
  • 2 tbsp. Olive oil
  • 1 cup Breakfast sausage
  • 1/4 cup All-purpose flour
  • 1/4 tsp. Red Thai chili peppers, chopped
  • 1 tsp. Salt
  • 1/8 tsp. Nutmeg
  • 1 tsp. Black pepper powder
  • 3 cup Whole milk
  • 2 tbsp. Hot sauce
  • ㅤHash Browns
  • 3 large potato, shreds
  • 1/2 tsp. Neutral oil
  • 1 tbsp. Unsalted butter
  • ㅤSeasoning
  • 1 tbsp. Garlic powder
  • 1 tbsp. Onion powder
  • 1 tsp. Black pepper powder
  • 1/2 tsp. Salt

Using the largest holes on a cheese grater, grate the cold butter into a bowl.

In a large bowl, sift the flour, baking soda, baking powder, salt, and sugar.

Add the chilled butter and cold buttermilk. Mix lightly to combine and empty contents onto a lightly floured surface.

Gently fold the dough 3-4 times on itself to combine and the dough is an even 1.5-inch thickness but be careful to not overwork the dough.

Using a 2-3 inch ring mold, press firmly through the dough and transfer to a parchment-lined baking dish. You can rework the excess dough for additional biscuits but they will be slightly denser.

Make sure the biscuits are touching each other slightly, this will help them to rise.

Bake 425°F/220°C.for 8 minutes.

Melt 2T butter and brush biscuits evenly. Lightly dust with coarse salt and return to the oven for 4 minutes.

Preheat oven to 375°F/190°C.

Place sausage and olive oil in a large deep skillet.

Cook over medium-high heat until evenly brown. Remove sausage with a slotted spoon, leaving the drippings in the pan.

Add flour, and stir until smooth. Reduce heat to medium, and cook until light brown. Add chili flake if desired.

Season with salt, nutmeg, pepper.

Gradually whisk in milk, and cook until thickened.

Reduce heat, and simmer for 12 to 15 minutes.

Stir in cooked sausage and hot sauce. If gravy becomes too thick, stir in a little more milk.

Using a cheese grater, grate the potatoes.

Dampen one piece of paper towel, place on a plate, place potatoes on top, another sheet of damp paper towel.

Microwave 3-4 minutes, until cooked through. Let cool for 5 minutes, place in a large bowl with [Seasoning].

Form into desired shapes. Hewat neutral oil over medium heat in a cast iron. Cook hashbrowns until golden brown on one side, 4-5 minutes.

Flip, add butter, cook two minutes, and place in oven until finished cooking, 6-8 minutes.
