Braised Chicken with Lemon is a hearty meal that you can easily make at home. With sweet potatoes mashed into a puree and the light tanginess from the chicken, you will find that it is easy to eat healthy.
Braised Chicken With Mashed Purple Sweet Potatoes

- 2 tbsp Avocado Oil
- 4 large Chicken Thighs
- 2 tsp Coarse salt, divided
- 1 tsp Ground Black Pepper
- 2 cups Chicken Broth
- 2 tsp Cumin Powder
- 1 tsp Cinnamon Powder
- 1 tsp Smoked Paprika
- ½ tsp Ground Black Pepper
- 1 tsp Coarse Salt
- 1 tbsp Ginger, Minced
- 4 cloves Garlic
- ½ large Yellow Onion
- 2 large Lemon, sliced
- ½ cup Pitted Kalamata Olives
- 【Mashed Purple Sweet Potato】 ㅤ ㅤ
- 4 large Purple Sweet Potato
- 2 Qt Cold Water
- 1 tsp Salt
- 1 cup Coconut Milk
- 【Garnish】 ㅤ ㅤ
- Chives ㅤ ㅤ
Over medium-high heat add avocado oil to your skillet.
Season the chicken with salt and pepper and place skin down for 4-5 minutes on each side without touching.
Remove the chicken and let them rest.
Reduce the heat to medium and add chicken broth. Add the garlic and cook for 1-2 minutes.
Add chicken back in to saute pan and any juices left on the plate.
Slice the sweet onion into slivers and saute until translucent, and add your spices and stir until thoroughly mixed. (cumin,paprika,ginger,cinnamon)
Cut the lemon into wedges and place between the chicken, save 1-2 wedges to squeeze over the chicken, and add the olives.
Bring the chicken broth to a boil, then reduce the heat to low, cover with lid and simmer for 30 mins.
Peel the sweet potatoes and cut into small pieces.
Put them in a pot with water and cook. After boiling, turn to low heat for 15 minutes.
Drain the sweet potatoes and mix them into a puree. Add coconut milk and mix well.
Put the mashed potato on the plate, put the chicken on top of the sweet potato and garnish with chives.
