Tender, savory and delicate, this braised yellow croaker fish with tofu dish taste wonderful and goes perfectly with a bowl of steamed rice.

Ingredients:
  • 10 oz. Yellow Croaker Fillets
  • Marinade
  • 1 tbsp. Soy sauce
  • 1 count Egg white
  • 1 tbsp. Corn starch
  • 1 lb. Firm Tofu
  • 1 oz. Garlic cloves
  • 1 cup Cooking Oil
  • 0.5 oz. Ginger Slice
  • 0.5 oz. Green Onion, chopped
  • 1 tbsp. Shaoxing Wine
  • 500 ml Water
  • 1 tbsp. Dried chili
  • 2 tbsp. Shaoxing Huadiao Rice Wine
  • 0.25 cup Soy sauce
  • 3 tbsp. Rock sugar
  • 0.25 tsp. White Pepper
  • 1 tbsp. Water + Corn Starch Slurry (a mixture of water and starch of equal proportions)
  • 1 tsp. Chef Made Assorted Aroma Oil (See ''Chef John Signature Oil'' Video)

Fillet the yellow croaker, and cut into chunky pieces.

Marinate the fish with soy sauce, egg white, and corn starch mixture.

Cut the tofu into ¼ inch thick 1-inch squares.

Deep fry tofu at oil temperature 250-300°F (120-150°C) until golden. Remove from oil and drain.

Add one tablespoon of oil in the pan, pan-fry the yellow croaker till golden brown on both sides.

Deep fry garlic cloves until golden.

In a cooking pot, add a tablespoon of cooking oil, ginger slices and green onion segments; stir fry for a little while; then add water, dried chili, soy sauce, rock sugar, yellow croaker, fried garlic, fried tofu, and a little ground white pepper. Stew for a few minutes.

Add water and corn starch slurry to thicken.
