A classic appetizer from Italy. Have you ever wanted to make sure you say it authentically? Pronounced “brusketta’’-with chopped fresh tomatoes, a hint of garlic and fresh basil sitting perfectly on a rustic baguette slice. By removing the skins on the Roma tomatoes it improves the flavor and texture. Just making sure your tomatoes are juicy ripe and at room temperature, it sure adds to the results.

Ingredients:
  • 2 Roma Tomatoes
  • 10 Mixed Cherry Tomatoes
  • 2 Garlic Cloves, sliced
  • 3 Large Basil Leaves, Julienned
  • 3 Green Olives, diced
  • 3 Red Olives, diced
  • 0.5 tsp. Salt
  • 0.25 tsp. White pepper
  • 1 tbsp. Extra Virgin Olive Oil
  • 1 loaf of Bread, sliced

Quarter the roma tomatoes deseed and carefully cut away flesh from the skin (requires a sharp knife).

Dice the flesh and place in a bowl.

Quarter and dice the mixed cherry tomatoes leave the seeds in and skin on as they tend to be sweeter.

Place in a separate bowl. Roughly slice one garlic clove for each bowl of tomatoes and mix in, allow the tomatoes to sit in room temperature 10~15min to allow the garlic to infuse.

To thinly slice the basil leaves, stack them on top of each other and roll them up like a cigar then slice thinly creating threads.

Pick out the garlic from each bowl of tomatoes ( save them to rub on your baguette slices before toasting). Then put the basil, olives, salt(1/2 tsp each bowl), pepper(1/4 tsp each bowl) and olive oil(1/2 tbsp each bowl) to the cherry tomato bowl.

Toast the baguette on the griddle pan until browned on both sides.

Place your bruschetta on to your freshly toasted baguette slices and enjoy a taste of summer.
