Castella cake is a popular Japanese honey sponge cake. It’s super soft, jiggly to the touch, and mildly sweet. It melts in your mouth as you eat it. It was brought to Japan by Portuguese merchants in the 16th century, and developed into this delicate, honey-flavored sponge cake of today. The name is derived from Portuguese Pão de Castela, meaning “bread from Castile”.

Ingredients:
  • 30 g Egg Yolk
  • 1/4 tsp Vanilla extract
  • 9 g Honey
  • 7 g Sugar
  • 0.5 g Salt
  • 50 g Milk
  • 35 g All-purpose Flour
  • 2 g Baking Powder
  • 70 g Egg White
  • 23 g Sugar
  • - Topping -
  • 1 tbsp Butter
  • 1 tsp Powdered sugar
  • 1 tbsp Maple syrup

Preheat the oven to 340°F/170°C.

Separate the eggs. Place the egg whites into a large mixing bowl and chill in the fridge.

In a large bowl, combine egg yolk and vanilla extract. Add honey and mix well. Then, add sugar, salt, milk separately to the egg yolks and whisk until well mixed. Sift in all-purpose flour and baking powder. Mix well and set aside.

In another bowl, whisk the egg whites until pale and frothy. Add 1/2 of the sugar at a time and continue whisking until medium stiff peaks.

Add 1/3 of the meringue to the egg yolk mixture and fold.

Then, add the rest of egg white to the mixture and fold.

Pour the batter onto a 15~16cm diameter skillet and smooth the top with a spatula. Bake in the oven for 7 mins.

Then, take it out and cut a cross at the top with a small knife.

Return to the oven and bake for another 12~15 mins until well-risen and golden brown on top.

Serve immediately with butter, powdered sugar and maple syrup. Enjoy!
