  • Marinade
  • 2 tsp. Gamasala
  • 2 tsp. Red curry paste
  • 1 tsp. Cumin powder
  • 1 tsp. Onion powder
  • 1 large Lemon zest
  • 5 sprigs Thyme
  • 1 clove Garlic
  • 1/4 cup Extra virgin olive oil
  • 1/2 tsp. Salt
  • Sauce
  • 1 large Red bell pepper
  • 1 large Fresno chili
  • 1/2 cup Calabrian Pepper Paste
  • 1 tbsp. Cilantro
  • 1 tbsp. Smoked Paprika
  • 1 clove Garlic
  • 2 tbsp. White Vinegar
  • 1/2 tsp. Salt
  • Caramelized onion
  • 2 tbsp. Extra virgin olive oil
  • 1 tbsp. Butter
  • 1/2 large Yellow onion, sliced
  • 1 tsp. Curry paste
  • 1 tsp. Smoked paprika
  • 1/4 tsp. Salt
  • ㅤGreek Yogurt Sauce
  • 8 oz. Greek yogurt
  • 1/2 medium Lemon, Juiced
  • 1 clove Garlic
  • 1 tbsp. Parsley
  • 2 tbsp. Cilantro
  • 1/8 tsp. Salt
  • 4 tsp. Extra virgin olive oil
  • 1/4 tsp. Ground black pepper
  • ㅤFor Backed Cauliflower
  • 1 tbsp. Red wine vinegar
  • 2 tbsp. Olive oil
  • 1/8 tsp. Ground black pepper
  • 2 tbsp. Almond
  • 1 small Shallot
  • 2 tbsp. Cilantro
  • ㅤGarnish
  • 2 tbsp. Parmesan cheese
  • Cilantro
  • Lemon zest
  • Currants

Heat oven to 500°F/260°C.

Whisk together the 【Marinade】 In a large bowl.

Toss the cauliflower florets with the marinade until well coated.

Bake for 10 minutes (browned and cooked through).

Roast the Fresno and bell pepper in a dry pan or fry till soft and skin separate from the flesh. Cover and let sweat.

Remove skin and seeds then chop fine or blend with Calabrian chiles.

In a bowl mix chiles, cilantro, smoked paprika, grated garlic, and vinegar. Season with salt to taste. Hold harissa to top cauliflower shawarma.

Heat olive oil and butter in a large saucepan over medium until melted and sizzling. Add sliced onions and stirring, until onions are soft.

Add salt, curry paste, and smoked paprika, stir well.

In a medium bowl mix, all the ingredients of 【Greek Yogurt Sauce】.

When the cauliflower still hot, toss it with 【For Backed Cauliflower】 in a bowl.

Grated ricotta Salata over plated cauliflower then spread the caramelized onions over. Sprinkle the harissa over the plated cauliflower or serve on the side with the herb labneh.
