Ingredients:
  • 2 large Eggs
  • 2 tbsp. Heavy whipping cream
  • Salt to taste
  • Ground black pepper to taste
  • 3/4 (85 g) cup Shredded cheese
  • 2 (60 g) oz. Fresh mozzarella, sliced
  • 1/2 large Tomato, sliced
  • 2 tbsp. Fresh basil

Whisk together eggs and cream in a bowl with a fork. Season with salt and pepper.

Heat a non-stick frying pan on medium-high heat. Spread out the cheese in an even layer in the pan, so it covers the entire bottom. Fry until the cheese gets bubbly and a bit translucent.

Carefully pour the egg mixture over the cheese and lower the heat. Cook for a few minutes without stirring.

Fill one-half of the omelet with tomatoes, mozzarella and basil. Season with salt and black pepper.

When the egg mixture starts to set, flip the empty half over the topping side using a spatula, forming a crescent. Fry for a few more minutes before transferring the omelet to a plate.
