Ingredients:
  • 1 lb. Chicken legs
  • 1 oz. Green chili
  • 0.5 oz. Garlic, sliced
  • 0.5 oz. Dried red chili, chopped
  • 0.5 oz. Green onion, chopped
  • 0.5 oz. Basil
  • Chicken Marinade -
  • 0.5 tbsp. Soy sauce
  • 1 large Egg
  • 1 tsp. Salt
  • 1 tbsp. Corn starch
  • Seasoning -
  • 1 tbsp. Sichuan peppercorns
  • 1 tbsp. Chili oil
  • 1 tbsp. Soy sauce
  • 1 tbsp. Sugar
  • 1 tsp. Salt
  • 1 tbsp. Zhenjiang rice black vinegar
  • 0.5 cup Beer
  • 0.25 cup Slurry (a mixture of water and corn starch of equal parts)
  • 0.5 tbsp. Sesame oil

Debone the chicken leg, then cut into chunky pieces.

In a mixing bowl, combine chicken with marinade ingredients: soy sauce, egg, salt, and corn starch thoroughly. Then marinate for 30 minutes.

In a skillet over high heat, add cooking oil and peppercorns, and stir fry until fragrant. Then, add green chili, garlic slices, chopped dry chili, chili oil, and the chicken, and stir fry until the chicken pieces are no longer pink. Add chopped green onion, soy sauce, sugar, salt, Zhenjiang vinegar, and beer, and stir fry several times. Then, pour in cornstarch slurry to thicken the sauce, and add sesame, and basils. Continue to stir fry until desired consistency.
