Ingredients:
  • 8 oz. Chicken Breast   
  • 0.25 tsp. Salt [Marinade]
  • 1 tsp. Water [Marinade]
  • 1 count Egg White [Marinade]
  • 1 tsp. Corn Starch [Marinade]
  • 1 tsp. Vegetable Oil [Marinade]
  • 7 oz. Broccoli, Cut Into Small Crown Pieces
  • 2 oz. Carrot, Sliced
  • 2 tsp. Chef Made Assorted Aroma Oil (See ''Chef John Signature Oil'' Video)
  • 1 tbsp. Garlic, Minced
  • 2 tbsp. Shaoxing Wine
  • 0.5 tbsp. Oyster Sauce
  • 1 tbsp. Soy Sauce
  • 1 tsp. Sugar
  • 1 tbsp. Corn Starch + Water (A Mixture of One Part Starch and 2 Parts Water)
  • 2 stalks Green Onion, Chopped

Slice the chicken breast into 1/8-inch (0.3 cm) pieces.

In a mixing bowl, combine chicken, salt, water, egg white, starch, and cooking oil.

Toss to coat evenly, then refrigerate for 1 hour.

Cut broccoli and carrot into bite-size pieces.

In a wok over high heat, bring 2 to 3 cups of cooking oil to 250-300°F/120-150°C. Fry the chicken until the color change to white. Remove from heat and drain.

In a cooking pot, bring 3 cups of water to a boil. Add the broccoli pieces and sliced carrot, and cook for 20 seconds. Drain from boiling water, and rinse with cold water. Set aside.

In the wok over medium heat, add peppercorn oil and minced garlic, and stir-fry until fragrant.

Then add sliced carrot, broccoli, chicken, oyster sauce, soy sauce, sugar, and chili oil. Toss to mix well and add slurry to thicken to sauce. Then, add chopped green onion, and stir-fry several times until fully mixed.
