Place the chicken between two sheets of plastic wrap, pound chicken with a meat mallet to loosen and tenderize the meat.

Place the pounded chicken into a bowl, then add greek yogurt, paprika, cinnamon, cumin, cayenne pepper, coriander powder, minced garlic, salt, and black pepper. Squeeze in the juice of 1 lemon, then stir in olive oil. Mix well and marinate the meat for 1 hour.

Preheat the oven to 400°F / 200°C, slice tomato and onion.

Cut off the top and ends of the pineapple, then trim off the skin and cut it in half. Place the vertical rotisserie on the table, skewer half of a pineapple through the spit onto the bottom, then skewer the marinated chicken piece by piece through the spit, finally, skewer the remaining half of the pineapple through the spit. Place the meat into the oven and roast for 1 - 1 ½ hour.

To make the pita bread, combine yeast, sugar, salt and warm water in a bowl. Place the flour on a clean work surface and make a well in the center, pour the yeast water into the well and mix to form a dough. Knead the dough until smooth, then cover with plastic wrap and let it rise at room temperature for 30 minutes.

Lightly dust the work surface with flour, roll the dough into a thick cylinder, and use your hands to divide it into 5 equal-size pieces. Flatten the dough, then use a rolling pin to roll it into a large, thin circle.

Heat a cast-iron skillet over medium heat, place the pita dough into the skillet, when the bread is puffing up and its bottom turns a light brown, flip to cook the other side. (cook each side for about 1-2 minutes) Remove bread from the heat. Repeat this until you’ve cooked all the bread.

To make the tzatziki sauce, mix Greek yogurt with minced dill, garlic, parsley, lemon juice, salt and black pepper and set aside. Remove chicken from the oven, and carve the meat into bite-size pieces.

Cut an inch off the pita bread, and spread the sauce inside the pocket. Stuff the pita bread with lettuce, sliced tomato and onions, and roasted chicken, enjoy immediately.
