Asian Chicken Lettuce Wraps

This is not your normal lettuce wrap. It’s packed with not only minced chicken and vegetables, but pine nuts, shiitake mushrooms and potatoes while wrapped taco-style in fresh lettuce leaves. These lettuce wraps are quick and easy to make, flavorful yet low in carbs. Great as a light meal, appetizer, or party food.

Finely dice the chicken breast and place it in a bowl. Add in salt, sugar, soy sauce, cornstarch and oil. Stir ingredients together and marinate chicken in mixture for 15-20 minutes.

Heat 4 tablespoons of oil in a sauté pan over medium-high heat. Sauté marinated chicken for 1 minute, until the meat turns white. Stir in Chinese potato, cilantro stems, celery, cilantro leaves, carrots, and shiitake mushrooms, then cook for 2-3 minutes, until vegetables are soft.

Add soy sauce, oyster sauce, sesame oil and sugar, cook for another minute, then transfer to a bowl.

Fry pine nuts in hot oil until golden brown. Drain and set aside.

Spread shredded carrots evenly onto a plate. Spoon chicken mixture into lettuce leaves and arrange wraps on the plate. Top each wrap with toasted pine nuts and serve.
