Chicken & Potatoes

- 1 Whole Chicken

- 2 medium Garlic
- 4 large Peperocini Calabrese
- 1 large Lemon Zest
- 4 large Lemon, Juiced
- 2 tbsp Parsley, chopped
- 【Cook The Chicken】 ㅤ ㅤ
- 2 tsp Olive Oil
- 2 slices Bay Leaves
- 1 tsp Salt
- ½ tsp Ground Black Pepper
- 3 Large Potatoes
Clean and wash the chicken.Dry it with a paper towel, cut it into eight pieces
Marinate with lemon juice, 1 fresh garlic peeled clove, fine chopped with the pepperoncini.
Twist the fresh two bay leaves on it, Keep it marinated in the fridge for a couple of hours.
Peeled the three Idaho potatoes and cut them into regular pieces, wash them and pat dry on a paper towel, keep it on site. Seasoned at this point with fresh cracked pepper and coarse sea salt.
Heating it up a large skillet 14” wide, with the extra virgin olive oil, place the pieces of marinated chicken without the juice on the skillet and seared nicely over a medium flame, turn on every side of the chicken to make sure they will get a nice gold skin color,
Remove the pieces and placed them now in a large baking pan together with the cut it potatoes, and basted everything with the lemon marinated juice over it.
Put the pan in a hot oven at 180°C / 350°F and cook for 45minutes, remove out of the oven let it rest for 5 minutes before serving it, enjoy it.
