This delicious chicken stew recipe is loaded with vegetables, potatoes, tomatoes, carrots, and herbs. The result is a super tender chicken full of flavor and tender vegetables!

Ingredients:
  • 1 tbsp. Olive Oil
  • 1 oz. Garlic
  • 2 stalk Green Onion, Diced
  • 2 oz. Onion, Diced
  • 6 piece Ginger, Diced
  • 0.5 cup Brandy white wine
  • 0.5 cup Tomato Paste
  • 10.5 oz. Potato, Cubed
  • 7 oz. Carrot, Chopped
  • 2 lb. Whole Chicken Cut Into 12~15 Pieces
  • 1 tbsp. Salt
  • 1 tsp. Pepper
  • 0.5 oz. Dried Chilis
  • 1 tsp. Anise
  • 0.25 cup Soy Sauce
  • 0.25 cup Brown Sugar
  • 2 tbsp. Apple Cider Vinegar
  • 2 can Coke
  • 1 oz. Pickled Pepper
  • 2 oz. Cherry Tomato
  • 2 oz. Green Onion
  • 2 oz. Bell Pepper
  • 0.5 count Lime, Juiced

Heat a medium pot over medium-low heat. Add the olive oil, green onion, onion, and ginger slices and swirl it around the pan and sauté for 2 minutes until the onions are softened.

In the pod, add chicken pieces and mix well with onion and ginger. Add Brandy white wine, tomato paste, salt, dried chilis, anise, soy sauce, brown sugar, apple cider vinegar, and chopped carrots. Stir and mix well.

Add the coke, potatoes and pickled pepper to the pot.

Cover and simmer for 20 minutes. If using breast meat, add during last 15 minutes of cooking so it doesn't overcook and dry out.

Add cherry tomato, green onion, bell pepper, and lime juice to the stew.

Any beer will work in this recipe as stewing is a very forgiving cooking method. If you don’t want to use beer in this recipe, you can use chicken broth, ginger ale, or white grape juice.
