These addictive seasoned Chili and Garlic Potato Chip Prawns are amazing — Perfect finger food for a gathering! The shrimps are sweet and juicy, while the potato chip crust is crispy.

Ingredients:
  • 1 oz. Potato Chips
  • 3 medium Shallots
  • For the Shrimps
  • 0.9 lb. Prawns
  • to taste Ground Salt
  • to taste Ground Black Pepper
  • tbsp. Corn Starch 1.5
  • 2 cup Cooking Oil
  • 2 oz. Garlic
  • 2 oz. Ginger
  • For the Prawns Sauté
  • 4 sprigs Scallion (Divided)
  • 1/3 oz. Dried Red Chili Peppers
  • 1 tbsp. Cooking Wine
  • to taste Ground Salt
  • to taste Ground Black Pepper

Crumble the potato chips. Transfer to a bowl.

Mince the garlic and ginger. Slice the shallot and scallion.

Cut each shrimp along the back, deveined, tails intact. Stir in flour, seasoning with salt and pepper.

Heat oil in a large skillet over medium-high heat. Add sliced onion, minced garlic and ginger. Fry until the paste be dried. Transfer to a bowl.

In the same skillet, heat oil over high heat until it begins to smoke. Place the shrimp in and cook until red on all sides. Transfer to a bowl.

Heat oil in another large pan, add half of sliced scallion and dried chili.

Put the shrimp and the paste in. Add cooking wine and flambé, sprinkle with ground salt and ground black pepper.

Spread the crumbled potato chips in the pan and fry it well.
