A plate of crispy chicken smothered in chili peppers, this Chili Chicken is made with lightly battered crispy chicken chunks lightly tossed with tons of aromatics to create an electrifyingly hot numbing sensation.

  • 1 lb. Boneless Chicken Leg Quarters
  • 1 tbsp. Paprika Powder [Marinade]
  • 0.25 tbsp. Sichuan Peppercorn Powder [Marinade]
  • 1 tbsp. Shaoxing Cooking Wine [Marinade]
  • 0.5 tsp. Salt [Marinade]
  • 1 count Egg [Marinade]
  • 0.25 cup Cornstarch [Marinade]
  • 1 tsp. Olive Oil [Marinade]
  • 2 tbsp. Szechuan peppercorn oil or chef - made Sichuan peppercorn oil (See "Chef john's signature oils" video)
  • 1 tbsp. Szechuan Green Peppercorns [Seasoning]
  • 1 tbsp. Szechuan Peppercorns [Seasoning]
  • 1 tbsp. Minced Garlic
  • 0.3 cup Chili Pepper
  • 0.3 cup Shallots
  • 1 tbsp. Minced Ginger
  • 1 stalks Green Onion
  • 1 cup Dried Chili
  • 1 tbsp. Shaoxing Cooing Wine [Seasoning]
  • 1 tsp. Sweet Black Rice Vinegar [Seasoning]
  • 1 tsp. Pepper Salt Powder [Seasoning]
  • 1 cup Basil
  • 1 tsp. Sesame Oil [Seasoning]
  • 1 tbsp. Szechuan peppercorn oil or chef - made Sichuan peppercorn oil (See "Chef john's signature oils" video)

Cut the boneless chicken leg quarters to ½-inch cubes.

Marinade chicken with all marinade ingredients for one hour.

Cut the dried chili and Mexican chili.

In a heated wok, fry the chicken at oil temperature 350-400°F (180-200°C). Remove from the wok. Then, re-fry quickly for 40 seconds and remove the chicken in a strainer to drain the oil.

In a wok, add the following seasonings in the sequence below: minced garlic, chili pepper, shallots, minced ginger, green onion, and dried chili. Stir well.

In the same wok, add the chicken, salt and pepper, Zhenjiang vinegar, Szechuan peppercorns, basil, sesame oil, Shaoxing cooing wine, sweet black rice vinegar, pepper salt powder, basil, sesame oil, and Szechuan peppercorn.

Quick stir-fry a few times then it's ready to serve.
