Pasta with Marinara is a classic dish, but this recipe will show you how to add a bit of a twist to it via Chinese sausage. Chinese sausages have a bit of sweetness to them which complement the acidity in the Marinara and the creaminess of the pasta. This is a classy, yet simple dish that harmonizes both Chinese and Western cuisine.

Ingredients:
  • 50 g Onion, Chopped
  • 3 tbsp. Garlic, Chopped
  • 3 cup Can crushed tomato
  • 1 pc Cinnamon stick, Toasted
  • 1 pc Star Anise, Toasted
  • 1 pc Clove, Toasted
  • 1 pc Bay leaf, Toasted
  • 2 tsp. Salt (For Marinara sauce)
  • 5 pcs Chinese Sausage
  • To taste Chilli Flakes
  • To taste Pepper
  • 2 tsp. Salt (for the pasta)
  • 2 tbsp. Butter (for the pasta)
  • 8 oz. Spaghetti

Slice the Chinese sausage.

In a frying pan over high heat, add a tablespoon vegetable oil, when the oil is hot, add the sliced Chinese sausage, sauté until dark brown. This process will create the Mailard reaction that will add depth of flavor to the final sauce.

Add the sauteed Chinese sausage to a blander, using the pulse button until sausage slices become large crumbs. Then set aside.

In a cooking pot over medium low heat, add a tablespoon of vegetable oil, minced onion and minced garlic, stir a few times, then add the rest of spices, crushed tomato, a pinch of salt and a pinch of chili flakes, stir to mix thoroughly. Simmer for at least 30 minutes.

Add the sausage crumbs into the tomato sauce pot, stir to mix, continue simmer for about 10 minutes. Add salt and pepper to taste.

Boil a pot of water and season with salt until the water tastes salty. Add spaghetti and cook for 6 minutes or until it is 60% cooked. Drain out the pasta.

Add the pasta to the marinara sauce, letting it absorb the sauce and cook to 100%. This will make the pasta itself tasty and not bland. And serve with desire pasta.
