Chef John’s Cooking Class | Chinese Style Braised Meatballs


This recipe will show you how to make delicious meatballs with water chestnut, pork and turkey. The rich flavor and amazing texture of the meatballs will blow your mind away.

  • Meatballs
  • 9 oz Ground pork
  • 7 oz Ground turkey
  • 5 medium Water chestnut
  • 1 tbsp Ginger, minced
  • 1 tbsp Green onion, chopped
  • 1 tbsp Shaoxing wine
  • 1 tbsp Light soy sauce
  • 1 large Egg
  • ¼ tsp White pepper
  • ¼ tsp Sugar
  • ½ tsp Italian seasoning
  • 1 tbsp Corn starch
  • tsp Salt
  • tsp Black pepper
  • 1 tbsp Water
  • For Making Meatballs
  • ¼ cup Cornstarch mixture
  • Cook The Meatballs
  • 1 tsp Shaoxing cooking wine
  • 1 cup Chicken broth
  • 1 tbsp Crystal sugar
  • tbsp Light soy sauce
  • 1 tsp Zhengjiang sweet black vinegar
  • 2 tbsp Slurry( 1 Tbsp of cornstarch and 2 Tbsp of water. )

Mince the water chestnut. (In addition to water chestnut, you can also choose pear or Chinese yam.)

In a mixing bowl, combine【Meatballs】and cornstarch. Mix thoroughly. (The best choice ratio of lean and fat meat is 7:3, or according to your preferences)

Making meatballs; place a bowl of a mixture of water and cornstarch on the side, wet your hands with the mixture. This is to prevent the meatball stick on your hands.
