Bamboo Shoots with Celtuce is a delicious yet healthy dish to add to your meal. It is crisp and refreshing.

  • tsp Ground Salt
  • 1 qt. Water
  • 8 oz. Bamboo Shoot
  • 8 oz. Celtuce
  • 2 tbsp Cooking oil
  • 1 tbsp Green Onion, Chopped
  • ½ tsp Salt
  • tsp White Pepper
  • ½ tsp Sugar
  • 1 tsp Sesame Oil

Cut fully cooked winter bamboo shoot into rough chunks.

Peel the celtuce and roll cut it into rough chunks as well.

In a cooking pot over high heat, bring and a half pot of water, and bring to a boil. Add a pinch of salt and winter bamboo shoot chunks into the boiling water, cook for 30 seconds.

Add celtuce chunks into the pot, cook for 10 seconds.

Remove both vegetables from boiling water, put them into a bowl of iced cold water. Drain when completely cool.

In a large wok over medium-high heat, add oil. when the oil is hot, stir fry green onion until fragrant.

Turn off the heat, add in winter bamboo shoot, celtuce, salt. white pepper, sugar, sesame oil, and mix completely. Note: You must turn off the heat, then add the winter bamboo shoot and celtuce to the wok and mix well over the remaining heat

Note: Fresh winter bamboo shoot must be fully cooked. You can find packaged fully cooked winter bamboo shoots in Asian supermarkets if no fresh winter bamboo shoots. After blanching celtuce in boiling water, quickly put it in iced cold water, otherwise, it will turn yellow.
