Chef John uses a simple technique where the chicken is cooked slowly within a closed container, steam-pot. In the town of Jianshui, during the reign of Emperor Qianlong of the Qing Dynasty, a potter by the name of Yang Li created a steam-pot with a hollow tube in the middle. With this pot, a soup is gradually formed by the condensation of the steam and the juices of all the ingredients. Renowned for its rich and subtle flavor and its curative properties, this chicken soup, thanks to the clay steam-pot does not boil while cooking.

Ingredients:
  • 1 Whole Chicken
  • qt. Water
  • ¼ cup Rice wine
  • 2 rolls Poria cocos
  • 2 tbsp Gorgon fruit
  • ¼ cup Lotus seed
  • ½ cup Dried jujube
  • 4 slices Astragalus root
  • ½ tsp Salt
  • 2 tbsp Dried goji berries
  • 5 slices Dried lodoicea maldivicad

Remove any fat from the cavity opening and around the neck of the chicken. Rinse lightly and drain. Bring a pot of water to a boil, blanch the whole chicken in the boiling water for 1-2 minutes, remove chicken from boiling water and wash to clean. Put the chicken in a clay pot (or a stockpot).

Add about 2.5qt water until the chicken is just submerged in the water; continually add rice wine, poria cocos, gorgon fruit (prickly water lily seeds), lotus seeds, dried jujube, and astragalus root, cover the lid and bring to a boil. Turn the heat to low, simmer for 2.5-3 hours. Turn off the heat. Add salt to taste, dried lodoicea maldivicad (sea coconut), and goji berry. The goji berry will be cooked with the remaining heat. Note: It's better not to add too much salt in Chinese medicine herb chicken soup, otherwise the soup will not be as delicious.
