A luscious chocolate and coconut cake perfect for a meal ender. This three-layer cake is a combination of chewy chocolate sponge, covered with a creamy roasted coconut filling, and finished off with a smooth, delicious chocolate ganache. It may sound technical but, it is so simple that one can replicate the comforts of their homes. Everything is made with ease. Chocolate and salt are always a great combination to add that are why you can top the ganache with a sprinkle of salt to elevate the flavor profile and add a wonderful texture to the cake.

Ingredients:

  • 110 g Butter
  • 2 large Eggs
  • 180 g Caster sugar
  • Dry ingredients
  • 30 g Cocoa powder
  • 1 tsp. Salt
  • 80 g Polenta
  • Coconut filling
  • 200 g Coconut flakes
  • 1 can Condensed milk
  • 1 pinch Salt
  • 30 g Butter
  • Chocolate genoise
  • 120 g Milk or dark chocolate
  • 100 g Cream

Turn on the oven to 350°F/180°C. Prep a 9-in cake pan (23cm in diameter) with baking paper on the bottom.

Gently brown the butter. Leave to cool slightly.

Beat the eggs with sugar until it starts to foam.

Mix the dry ingredients in a separate bowl then add to the egg foam. Finish by adding 110g of brown butter and mix until lump-free and smooth. Pour into the cake pan and bake in the center of the oven for 25 minutes.

Meanwhile, roast coconut in a large saucepan on medium heat. When golden, add condensed milk and gently stir until creamy and homogenous. Add the remaining butter and season with a pinch of salt. Keep warm without continuing to cook the filling.

Take out the chocolate cake and leave it to set. When the cake is completely set pour the coconut filling over it and put it in the fridge to set for approx 10 minutes.

Meanwhile. Chop the dark chocolate. Heat the cream in a pot and pull it from the heat. Add chocolate and mix until it is melted.

Take out the cake from the fridge and ripple the chocolate coating all over the cake. Leave it to sit for 1h in the fridge.

Use a hot knife to cut the cleanest pieces and for that professional look, clean and dry knife with hot water in between every cut. Enjoy!
