Crispy French Fries with Battered Fish | Cooked in the Forest

INGREDIENTS:
  • - French fries -
  • 3 Potatoes
  • 2 cup Oil
  • - Tartar sauce -
  • 4 whole Pickled cucumber (gherkins), diced
  • 1 Onion, chopped
  • 1 Whole garlic gloves, chopped
  • 1/3 cup Yogurt
  • 2 tbsp Mayonnaise
  • Salt & pepper, to taste
  • 2 tbsp Wholegrain mustard
  • 1/2 Lemon, juiced
  • 1/3 cup Parsley, chopped
  • - Batter fish -
  • 1 cup Flour
  • 1 can Beer, 12 oz/350 ml
  • Salt & pepper, to taste
  • 2 tbsp Chilli flakes
  • 1 cup Kale, chopped
  • 1 Cod fillet, 1/2 lb.
  • - Garnish -
  • Salt, to taste
  • 1/2 Lemon, juiced

Cut the potatoes into matchsticks. Place the potatoes in a bowl of cold water. Soak the potatoes for at least 30 minutes. Drain the water from the potatoes. Place the potatoes on a layer of paper towels and pat thoroughly with additional towels until dry.

In a medium bowl, combine all the tartar sauce ingredients in a bowl. Set aside.

Heat about 3" of oil to approximately 300°F/150°C in a medium sized pot. Fry the potatoes in the pot, and cook until tender. This takes about 4-5 minutes, stirring and flipping the potatoes occasionally. Remove potatoes from oil. Heat oil to 350°F/175°C. Fry the potatoes again until golden brown, 1 to 3 minutes. Sprinkle salt and pepper to taste over the fries.

Meanwhile, in a large bowl of flour, slowly add the beer and mix well. Add salt, pepper, chili flakes to the batter. Optional, mix in chopped kales to the batter.

Wait until oil temp reach approximately 365°F/185°C. Dip fish fillet in the batter. Fry the fish for approximately 4.5 to 5 minutes or until golden brown.

Remove fish and put on rack to drain. Sprinkle salt over the hot fish. Serve with the tartar sauce. Enjoy!
