Crispy Pork Belly

INGREDIENTS:
  • 2 lb Pork belly
  • 3 tbsp Rice wine [Marinade]
  • 1 tsp Salt [Marinade]
  • 2 tbsp Five-spice powder [Marinade]
  • 3 tbsp White vinegar [Marinade]
  • 2 lb Coarse salt
  • 1 cup Apple vinegar
  • 1 count Egg White

Prick holes on the pork skin and meat sides.

Rub cooking wine, salt, and five-spice powder on the meat side.

Rub white vinegar and salt on the skin side. Marinate for 6 hours. (tip: prick holes to allow the flavors to get into the meat. )

In a large bowl, blend coarse salt, apple vinegar, and an egg white well.

Spread one half of the mixture on the bottom of a baking pan, place the pork belly on the coarse salt skin side up, then cover the top with the rest of the coarse salt.

Bake at 356℉/180℃ for 90 minutes.

Broil at 400℉/200℃ for 10 minutes until the skin is golden crispy.
