This delightfully crunchy fried shrimp is a must-try recipe if you love seafood. It’s a combination of tender shrimp with a crispy coating, seasoned with spicy salt.

  • 1/2 cup Cashew Nuts
  • 6 large White Shrimp
  • 1/4 tsp. Ground Salt 【Marinade Shrimp】
  • 2 tbsp. Corn Starch
  • 1/5 tsp. Baking Soda
  • tbsp. Milk
  • 1/4 tsp. Cayenne Pepper Powder
  • 1/8 tsp. Sugar
  • 1 bunch Cilantro
  • 1/4 tsp. Ground Salt
  • 2 tsp. Sugar
  • 2 tsp. Rice Vinegar
  • Spiced Salt
  • 1/8 tsp. Ground Black Pepper
  • 1/4 tsp. Ground Salt

Preheat the oven to 380°F/190°C.

Place 1.5 tbsp of peppercorn and the 1/2 cup of cashew nuts separately in 2 baking sheets.

Put the peppercorn on the upper rack, and the cashew nuts on the lower rack in the oven at the same time. Bake for 12-13 minutes and let it cool down. If there's no oven at home, you can heat them seprately with a skillet on low heat until browned and fragrant or if it's dried enough. Remember to stir frequently on low heat, otherwise, it's very easy to get it burned.

Cut the back of the shrimp. (Note: devein if necessary; today's shrimp has been deveined with the head already removed. It's necessary to clean with water and pat to dry)

Make 3 cuts on the shrimp belly, then skewer them. This optional step can keep the shrimp straight when frying it.

Season with salt and add to the plate.

Combine 2 Tbsp of cornstarch, 1/5 tsp of baking soda, 2.5 Tbsp of milk in a medium bowl; mix it into the batter and set aside. Tips: Baking soda can make the fried shrimp turn golden yellow and become more crispy but avoid adding too much, otherwise the color could be too dark.

Grind the baked peppercorn into powder.

Sieve the peppercorn to a bowl, and discard the big pieces.

Add cayenne pepper, sugar, black pepper and salt in a small bowl; mix and set aside.

Add about 3 inches deep oil to a small pan. Bring the temperature to 325°F/170°C, coat the shrimp with batter, then deep fry until golden brown.

Drain on paper towel and sprinkle the spiced salt mixture immediately.

Side dish: Blanch cilantro in a bowl with boiling water, take out then rinse in ice water.

Squeeze out the water then mince, add to a bowl.

Crush and chop the baked cashew nuts,

Combine with the parsley in the bowl. Add salt, sugar and rice vinegar, mix well.

You can choose either the shrimp with head or without head, the directions will be the same. The main seasoning will be Sichuan pepper. There are 2 kinds of Sichuan pepper called green pepper and red pepper to choose from. Green pepper has a stronger numb-taste, while red pepper has a stronger scent and not too much of a numb-taste.
