Detox Vegan Seasonal Pea soup

INGREDIENTS:
  • 1 tbsp Extra virgin olive oil
  • 2 rib Celery cut in large pieces
  • 3 cloves Garlic
  • ½ ea. Onion cut in large pieces
  • 4 cups Water
  • 1 tbsp Salt
  • 1 pinch Pepper
  • 1 lb. + 1 cup Organic frozen peas
  • 2 tbsp Chopp parsley
  • 4 cups Spinach
  • 3-4 piece piece Mint leaves garnish
  • Garnish
  • 1 tsp Extra virgin olive oil
  • Edible flowers

In a saucepan on medium-high heat add some oil then saute the celery, onion and garlic until the vegetables have released their aromatics and started to soften. Add the water, season with salt and pepper then simmer for approximately 5 minutes.

Add the peas (reserve 1 cup for later ) and parsley, spinach cook for a further 3 minutes, then add the mint and a teaspoon of lemon juice. Remove from the heat.

With a stick/immersion, blend the soup until it reaches a smooth consistency.

Serve and garnish with a drizzle of olive oil mint leaves and edible flowers. Enjoy.
