Ingredients:
  • 8 large Eggs
  • 200 ml Milk
  • 100 g Shredded cheese
  • 1/3 cup Tomato, chopped
  • 1/2 cup Ham
  • 1/3 cup Scallion
  • 3 count Potatoes
  • 1 tbsp. Olive Oil
  • 1 tbsp. Parmesan cheese
  • 1 pinch Salt
  • 1 pinch Black pepper

On the baking tray, mix chopped potatoes, olive oil and Parmesan cheese, seasoning with salt and pepper. Bake at 320°F (160°C) for 10 minutes. Set aside.

Whisk 8 eggs, milk, cheddar, chopped tomato, diced ham and minced scallion. Seasoning with salt and pepper. Mixture well.

Pour on the medium well potatoes and bake again at 340°F (170°C) for 17 minutes.
