Ingredients:
  • 1 cup Tomato
  • 1 tbsp. Garlic
  • 0.67 cup Shallot
  • 8 oz. Boneless Chicken Leg
  • 8 count Shrimp
  • 9 oz. Octopus
  • 3.5 oz. Crab
  • 0.25 tsp. Saffron
  • 12.6 oz. White RIce
  • 4 cup Vegetable Stock
  • 2 tsp. Salt
  • 10.5 oz. Clams
  • 1 tbsp. Parsley
  • 1 count Lemon

Dice the tomatoes, mince garlic and shallots. Cut chicken into medium-size chunks.

Heat 3 tablespoons of oil in a large skillet over medium heat, sear the shrimp, octopus and crab for 1 minute on each side, then transfer to a plate with the juices.

Continue heating the pan over medium heat, add 2 tablespoons of oil, and sauté chicken until slightly brown.  Stir in minced garlic and shallots, add another tablespoon of oil, then sauté saffron in the oil until aromatic.

Stir in diced tomatoes and sauté until soft, then add in white rice and mix to coat the grains.  Cook the mixture for 2-3 minutes, then stir in vegetable stock. Bring to a boil and cover pan with a lid. Reduce the heat to a low simmer and cook for 10 minutes.

After 10 minutes, remove lid and season rice with salt to taste. Stir the rice to help the grains absorb the flavors. Top the rice with cooked crab, shrimp and octopus, followed by clams. Put the lid back on and cook for 5 minutes, until the clams have opened.

Chop parsley and sprinkle it over the simmering paella. Scoop paella into a large serving plate and enjoy with a squeeze of fresh lemon.
