Egg Net Wrapped Fried Rice

  • 1 cup White Rice
  • cups Water
  • cup Bacon
  • ¼ cup Carrots
  • cup Mushrooms
  • ¼ cup Scallions
  • ½ cup Peeled Shrimp
  • ¼ cup Green Peas
  • ¼ tsp Turmeric Powder
  • 4 medium Eggs
  • 1 tsp Balsamic Reduction
  • 1 tsp Parsley

Add white rice and 1 1/2 cup of water into a medium saucepan, cover with lid and bring to a boil, then reduce the heat to low and simmer until the rice is cooked through, around 16-18 minutes. Scoop the cooked rice into a bowl and set aside.

Finely dice the bacon and carrot, slice the mushroom and mince the scallions.

Heat a frying pan over medium heat, add bacon and cook for 1-2 minutes, then add mushroom and carrot and saute until soft.

Add the shrimp, green peas, cooked rice, turmeric powder, and season with salt and black pepper to taste. Stir-fry the ingredients for 1-2 minutes, then add in minced scallions, cook the rice for another 30 seconds then remove from heat.

Crack four eggs into a bowl and whisk until no whites remain.

Heat 3 tablespoons of olive oil in a non-stick skillet over medium heat. Pour the beaten eggs into a plastic ziploc bag and cut off a small corner of the bag.

Drizzle the eggs over the pan in a zig-zag motion to form a cross-hatch pattern. Once the egg net sets, carefully lift it off the pan with a spatula.

Place the egg net over a square bowl, spoon the fried rice onto the egg net, then fold the sides of the egg net over the rice.

Flip the bowl over onto a plate, top with balsamic reduction and chopped parsley, and serve immediately.
