A crispy, airy batter that steams the cod and keeps it tender. For the perfect condiment, you must have a huge dollop of homemade tangy tartar sauce. You know it goes best with fish and chips “it’s a given!”.

Ingredients:

  • 1 cup Mayonnaise
  • 3 tbsp. Pickle, diced
  • 3 tsp. Capers
  • 1 tbsp. Pickled Onion, finely diced
  • 1 tbsp. Parsley, diced
  • tsp. Lemon Juice
  • 1 tsp. Salt
  • Beer Batter
  • 1/2 cup AP Flour
  • 1/2 cup Corn Starch
  • 1/4 tsp. Salt
  • 1 tsp. Baking Powder
  • 2 large Egg Whites
  • 1/2 cup Light Beer
  • 1/4 tsp. Turmeric Powder
  • Seasoning
  • 1 tsp. Salt
  • 1/4 tsp. AP Flour
  • Fish
  • 4 Silver Cod Fillet
  • Assemble
  • 1 tsp. Malt Vinegar
  • 1ㅤ half Lemon

Cut your clean potato in half then cut again into thick wedges and leave the skin on.

Add the wedges to cold water and bring to the boil for approximately 25 minutes.

Pull them out and lay them on kitchen paper (Note: start with cold water to allow even cooking on your potatoes inside and out.)

To make your tartar sauce start with your mayonnaise in the bowl than one by one stir in some cornichons, capers, pickled onions, herbs, lemon juice, and salt.

Heat the oil to 350 °F for frying. Prepare the batter by mixing your dry ingredients together in the bowl, then add the beer. The Consistency of your batter should be medium thick similar to pancake batter. Now add your frothy egg whites turmeric and salt.

Dredge your cod with a light dusting of flour, then submerge the cod fillet into the batter coating it all over. Check your oil has reached the temperature 350°F.

Slowly and carefully place the cod pieces in the hot oil so they don't stick to the bottom of the pan, and carefully fry the codpieces until they have risen to the top and have a light golden color. Remove the fish and lay them on kitchen paper and dust with a little salt.

Place your potato wedges into the hot oil carefully and deep fry them until crispy golden brown and delicious.

Set your plate, lay out your fish and chips with your homemade creamy tangy tartar sauce with some fresh lemon wedges.
