There is nothing better than a light, clear fish broth: savory with a lingering taste of the sea. Add some shiitake mushrooms as a chewy side dish!

Ingredients:
  • 1 Whole striped bass
  • For the Fish Bone
  • 1 tbsp. Olive oil [For the Fish Bone]
  • 1 tbsp. Cooking wine
  • 2 cup Chicken broth
  • For The Fish Fillets
  • 1/2 tsp. Salt
  • 1/8 tsp. Black pepper
  • 1 stalk Scallion, sliced
  • 3 Ginger slices
  • 1 tbsp. Ginger, minced
  • For The Mushrooms
  • 1 tbsp. Olive oil
  • 1/6 cup Scallion
  • 2 tbsp. Ginger
  • 2 cloves Garlic
  • 4 cup Shiitake mushroom
  • 1/2 tsp. Fish sauce
  • 1 tsp. Soy sauce
  • 1 tsp. Vinegar
  • 1 tsp. Sesame oil
  • For Garnish
  • 1/2 cup Fresh cilantro leaves

Fillet the fish.

Slice fish bones into smaller pieces and pan fry until golden brown.

Deglaze with cooking wine and chicken broth. Cook at high for 10 minutes.

Slice the fish fillet into small pieces, then marinate with salt and black pepper for 10 minutes.

When the soup is ready, remove the fish bones.

Add salt and black pepper to taste.

Slice scallion and ginger, add to the soup.

Place the fish fillet into the pan, shower the fish fillet with the soup, then cover and simmer for 5 minutes.

Add oil to another pan.

Chop the scallion, mince ginger and garlic, add to the pan.

Slice shiitake mushrooms, add to the pan, stir-fry until the mushroom becomes soft.

Add fish sauce, soy sauce and vinegar.

Add a few spoonfuls of the soup into the mushrooms, stir-fry until the soup is reduced to nearly dry.

On a serving plate, place the fillet and shiitake above. Garnish with some sesame oil and cilantro.
