There is nothing better than a light, clear fish broth: savory with a lingering taste of the sea. Add some shiitake mushrooms as a chewy side dish!

Fillet the fish.

Slice fish bones into smaller pieces and pan fry until golden brown.

Deglaze with cooking wine and chicken broth. Cook at high for 10 minutes.
