Cheeseburgers are an American classic and now you can learn how to make them easily with a delicious bacon jam. Tender meat with a savory taste with melted cheese makes a great meal.

Ingredients:
  • French Fries
  • 4 lb. Russet potatoes
  • 1/2 cup Potato starch
  • 1 tsp. Coarse salt
  • Burger Patty
  • lb. Beef chuck
  • 1 lb. Boneless beef short ribs
  • 2 tsp. Salt
  • 2 tsp. Ground Black Pepper
  • 2 tbsp. Vegetable Oil (For cook the patty)
  • Bacon Jam
  • 2 tbsp. Vegetable oil
  • 1 lb. Uncured diced pancetta
  • 2 large Yellow onion
  • 1 tsp. Sea salt
  • 2 tsp. Ground black pepper
  • 1 tsp. Baking soda
  • 2 cloves Garlic, minced
  • 1/2 cup Brown sugar
  • 1/3 cup Strong brewed coffee
  • 1/2 cup Water
  • 1 tbsp. Balsamic vinegar
  • 1 tsp. Hot sauce
  • For The Buns
  • 2 tbsp. Butter, diced
  • 6 large Buns
  • Assemble
  • 4 slices Cream Cheese
  • 2 tbsp. Mayonnaise
  • 2 tbsp. Dijon Mustard
  • 2 tbsp. Tomato Ketchup
  • 6 slices Butter Lettuce
  • 1 large Tomato

Slice potatoes into ½-in thickness. Work quickly or potatoes will discolor. You can place the potatoes into cold water to keep the flesh from going black.

Preheat oven to 300°F/150°C.

Drain water from potatoes and pat dry with paper towels.

Toss in potato starch and lay evenly on baking sheets.

Bake in the oven for 20-30 minutes until tender but not falling apart.

Using a meat grinder with a medium die, grind the meats into a medium bowl.

Using your hands, mix the meat until incorporated and tacky, then form into six 6-ounce patties. Season both sides liberally with salt and pepper.

Heat a large saute pan over medium. Add a touch of cooking oil and uncured diced pancetta, stirring to break them apart. Cook for about 10 minutes until cooked through.

Using a slotted spoon, remove the bacon from the pan and set aside. Save 1T bacon grease in the pan.

Add the onions, salt, pepper, and baking soda to the pan and cook for about 8-10 minutes then reduce the heat to low.

Continue to cook until the onions have caramelized after about 20 minutes. Add garlic, sugar, coffee, water, Balsamic vinegar, and the cooked bacon then increase the heat to medium. Add hot sauce and continue to cook, stirring about every five minutes, until the onions are thick and jam-like for about 30 minutes.

Heat a grill or cast iron over medium-high heat. Add butter and cook the burgers, flipping once, until charred and medium-rare for 4 to 5 minutes per side.

Medium-rare is perfect for home-ground burgers but you can cook it to your desired doneness.

Toast buns in skillet. Heat skillet over MED-HIGH heat with a small drizzle of butter. Add buns cut side down and cook until golden brown. Turn off heat and set aside.

Fry baked potatoes until golden brown.

To assemble the burgers, spread a generous amount of the cream cheese, mayonnaise, dijon mustard, ketchup and bacon jam on the bun.

Top with a thick slice of tomato and butter lettuce followed the burger patty. Set the top bun in place.
