Ingredients:
  • 4 Eggs
  • 0.25 tsp. Salt
  • 0.25 tsp. Pepper
  • 1 tbsp. Ginger
  • 2 tbsp. Scallion
  • 1 tbsp. Soy Sauce
  • 1 cup Water
  • 0.5 cup Mushroom
  • 0.5 cup Cherry Tomato
  • 1 tbsp. Cooking Oil
  • Marinate
  • 7 oz. Minced Pork
  • 0.5 tsp. Salt
  • 0.25 tsp. Pepper
  • 0.25 cup Water
  • 2 tbsp. Ginger
  • 2 tbsp. Scallion

Mix the ground meat with minced ginger and minced scallion in a large bowl. Seasoning with salt and pepper. Add some water. Mix well. Set aside.

Break an egg in each of small bowl. Use chopstick to poke a small hole on egg yolk to fill the minced pork inside. (Note: Please poke the hole on the specific spot which looks like an eye on the egg yolk. Do not break the egg.)

Warm up a skillet, pour some cooking oil, place on the egg, pan-fry as over-egg. Transfer to a plate.

In the same skillet, turn to high heat, add in chopped scallion, chopped ginger, sliced mushrooms and chopped tomatoes. Stir-fry a while. Seasoning with salt, pepper and soy sauce. Pour in some water and place back the over-egg. Cover the lid. Cook for 5 minutes.
