Ingredients:
  • 2 cup Potato
  • 2 cup Shrimp
  • 1 tbsp. Ginger
  • 0.25 cup Water
  • 0.25 cup Potato Starch
  • 0.5 tsp. Salt:
  • 0.25 tsp. Black Pepper
  • 0.1 cup Cooking Wine
  • 3 cup Cooking Oil
  • 0.5 cup Mayonnaise

Place shredded potatoes in a bowl of cold water to rinse off excess starch.

Remove the shrimp shell, devein shrimp, and mince into small pieces. Transfer to a large bowl. Season with salt, black pepper, cooking wine, ginger, and water; mix well. Finally, add potato starch, and mix the ingredients together.

Heat the oil in a pan until the temperature is high. Drain the shredded potatoes, and place in the oil, frying until golden brown. Using a handheld strainer, transfer fried potato shreds onto a plate covered with paper towels.

In the same pan, place a small scoop of shrimp mixture into the oil. Repeat until the pan is filled, but not crowded. When the shrimp balls are fried to a light golden brown, remove with a handheld strainer, and place in a bowl containing mayonnaise.

Coat the fried shrimp balls evenly with mayonnaise, then place into the fried potato shreds and coat thoroughly.
