Golden Egg Fried Rice with Shrimp

Beautiful and delicious one-dish meal, this Golden Egg Fried Rice with Shrimp is so easy to make and ready in 20 minutes or less. Chef John shares tips on how you can make egg yolks coated evenly and absorb into each grain of rice.

INGREDIENTS:
  • 10 oz Cooked Rice
  • 6 count Egg Yolks
  • 1 tbsp Cooking Oil
  • 1 cup Shrimps, peeled 
  • 1 tbsp White Wine
  • 0.3 cup Celery
  • 0.3 cup Onion
  • 0.3 cup Carrot
  • 1 tsp Ground White Pepper, to taste
  • 1 tsp Salt, To Taste
  • 0.5 count Squeezed Lemon Juice, to taste
  • 1 stalk Chopped Green Onion

Mince celery, onion, and carrots.

In a bowl, combine cooked rice and 3 egg yolks. Mix completely by hand.

In a wok, spray with cooking oil, and stir fry the peeled shrimp. Add a little white wine (to eliminate the odor), until color turns pinkish.

Add rice and egg yolk mixture into the wok. Stir-fry the rice and loosen up any clumps. Flatten the rice with the back of the spatula so that they are in contact with the base of the cooking pan. Then add minced celery, minced onion, and minced carrots; followed by a pinch of ground white pepper, salt, squeezed lemon juice, and 1 chopped green onions. Taste and adjust with more seasoning if needed.
