Herb-Encrusted Cod & Sea Scallops

Cooked to perfection the herb topping should form a crispy baked outer layer that allows the cod fillets to stay delicate and flakey. What a contrast! Refreshing, brimming with flavor which goes well with the mildness of the fish. The end result presents an all-rounder. So striking!

Preheat the oven to 400°F / 200°C

Combine the breadcrumbs with the parsley, dill, garlic powder, lemon juice, parmesan cheese, melted butter and check for seasoning.

Lay out the cod fillets and scallops separately, pat them dry, then coat with a little melted butter.

Add a generous spoonful of the herbed crumbs on top of the fillets and scallops, lightly press down. Place the fillets in the oven for 7-8 mins .

Place the cherry tomatoes and asparagus in a roasting tin and add a little olive oil and salt and pepper then bake in the oven for approx 15 minutes.

Put the sea scallops in the oven and bake for approx 3 minutes.
Then serve all three items together and enjoy!
