This elegant cut is easy to prepare and quick to cook. This tender, flavoursome roast makes a luxurious main course for that special someone. For a show stopper; at your next dinner party, add more ribs creating a crown (carré d’agneau).

Ingredients:
  • Marinade Ingredients
  • 5 sprigs of Rosemary (2 for marinate / 3 for rosemary basting brush)
  • 2 sprigs of Thyme
  • 2 sprigs of Oregano
  • 2 cloves of Garlic
  • 1 tsp. Salt
  • 0.25 tsp. Black Pepper
  • 0.25 cup Extra Virgin Oilve Oil
  • 2 lb. Lamb Chops
  • For the vegetables
  • 2 Carrot
  • 2 Parsnip
  • 3 White Mushroom
  • 2 Shallots
  • 1 tsp. Salt
  • 0.5 tsp. Black Pepper
  • 1 tbsp. Olive Oil

Preheat the oven 350°F/180°C.

Make the marinade by finely chopping the herbs, adding them to the minced garlic and olive oil then season with salt and pepper.

Use rosemary basting brush thoroughly coat (baste) the rack of lamb with the marinade mixture.

Allow to sit at room temperature for 5 to 10 minutes.

Chop the vegetables into similar chunky sizes for roasting, cut the shallots in half, toss them in the olive oil and season with salt and black pepper.

Place the rack of lamb in the oven roast for approx 20--30 minutes. Roast the vegetables for approx 30--35 minutes .

Carve the lamb between 2 bones and serve alongside the rustic roasted vegetables.
