Homemade pasta doesn’t have to be hard to make. With this simple recipe, you can easily make the kind of pasta you want and store extra in the freezer for any night. Paired with a creamy asparagus sauce, this recipe is a delicious treat that you can make on any night.

Ingredients:
  • For The Pasta
  • 3 cup Flour
  • cup Semolina Flour
  • 6 large Egg
  • 1 tbsp. Extra Virgin Olive Oil
  • ㅤCook The Asparagus and Tiger Prawns
  • 2.5 tbsp. Extra Virgin Olive Oil
  • 2 tbsp. Butter
  • 2 cloves Garlic Cloves
  • 1/2 large Onion
  • 8 oz. Asparagus
  • 12 oz. Shrimp
  • 2 tbsp. White Wine
  • 4 oz. Heavy Cream
  • ㅤCook The Pasta
  • tbsp. Extra Virgin Olive Oil
  • 1/8 tsp. Sea Salt
  • 1 cup Asparagus
  • 1 tbsp. Grated Parmesan Cheese
  • ㅤGarnish
  • 2 small Cherry Tomato
  • 1/4 tsp. Ground Black Pepper

Mix the semolina flour and flour in a bowl.

Make a hole in the middle and add all the eggs. Add oil and salt.

Start mixing with your hands from the middle. Knead the dough for 4 minutes. Flatten to about 2 inches and wrap with plastic wrap. Flatten to about 2 inches and wrap with plastic wrap.

Rest 1 hour at room temp before making the desired type of pasta. (Note: The remaining pasta can be kept in a ziplock bag in the refrigerator for refrigeration)

Unwrap and make pasta sheets with a pasta maker. Make sheets as thin as possible gradually reducing the thickness on the pasta maker. Pass through the pasta maker making fettuccine. Portion fettuccine by 200 grams each portion.

Leave the portions on a baking sheet rest for 10 minutes at least.

Fill the pot with water and wait for the water to boil. Once the water boils, put salt in the water, and add pasta.

Cut the asparagus in 1-inch pieces.

Warm-up a pan for 3 minutes and add olive oil, butter, garlic, and onion, let onions sweat for about 3 minutes.

Add the ¾ asparagus, stir for 2 to 3 minutes.

Add peeled shrimps and white wine to the pan and cook for 4 minutes.

Put cooked shrimp in a bowl, but leave 2 shrimp with the asparagus and add heavy cream stir well.

Put in a blender adding ½ to 1 cup of boiling water from the pasta and blend until smooth.

Add the olive oil, ¼ asparagus, cooked pasta, cooked shrimp, salt to the pan and cook for 1 minute on medium heat.

Reduce heat to medium and add the asparagus cream recently made with the cooking water.

Add grated parmesan cheese, stir pasta and cook for 2 to 3 minutes.
