Ingredients:
  • 2 lb. Yellow Chicken, cleaned
  • Marinade
  • 3 tbsp. Salt
  • 3 tbsp. Sand ginger powder
  • 3 stalks Green onion
  • 4 pieces Sand galangal
  • 1 tsp. Salt
  • 6 cup White sesame seed, enough to cover the entire chicken
  • Mixed Sauce
  • 2 count Egg white
  • 0.5 count Lemon juice, freshly squeezed of half a lemon
  • 1 tbsp. Honey
  • 1 tbsp. Corn Starch

Slice the galangal.

Rub the entire chicken with salt and sand ginger powder.

Stuff the green onion and galangal inside. Set aside to marinate for at least 6 hours.

In a bowl, combine egg white, lemon juice, honey, and starch. Blend well, and set aside.

Bring a large pot of water to boiling, and add a pinch of salt.

Submerge the whole chicken in the boiling water for 20 seconds, remove from boiling water; put the whole chicken in a bucket of iced water to chill down.

Brush entire chicken skin with the sauce prepared in step 3 to form a thick sticky coating to stick sesame seeds in the next step.

In a flat baking sheet, cover entire chicken skin with sesame seeds

Bake the chicken at 350°F / 180°C for 45 minutes. (please preheat the oven)

heat up enough cooking oil to 400°F / 200°C, use a hook to hold the chicken over the heated oil, and take a long-handled large spoon pour hot oil to the chicken repeatedly for several times to make the sesame seeds tastier.
