Honey Yogurt Chicken Salad

A nice and healthy low-fat dish that uses leftover chicken if you like. The roasted walnuts have a mild but tangy note that always goes well with chicken. Low-fat Yoghurt adds a substitute to mayonnaise that keeps those calories down making this dish super healthy when sitting in a lettuce cup or fresh crusty bread. INGREDIENTS:
  • Bake The Chicken
  • 1 large Chicken
  • 1 tsp Black pepper
  • 1 tsp Salt

  • 6 ea. Thyme
  • 2 ea. Bay leaves
  • 1 ea. Lemon
  • 1 tbsp Olive oil
  • Chicken Salad
  • 1 cup Nonfat Plain Greek Yogurt
  • 2 Tbsp Honey
  • 2 Tbsp Lemon juice
  • 1 Tsp Salt
  • ¾ Tsp Black pepper
  • ½ cup Celery
  • ¼ cup Green onions
  • ½ cup Toasted walnuts
  • ½ cup Seedless grapes, cut in half
  • 2 Tbsp Yellow celery leaves, chopped divided
  • 1-2 Heads Bibb Lettuce / Butter Lettuce, julienne
  • 1-2 Tbsp Hot Sauce, Optional

Preheat oven to 425°F/220°C

Pat dry inside of the chicken.

Stuff the garlic head into the chicken cavity along with the thyme, bay leaves, and lemon. Drizzle olive oil inside.
