This creamy Indian dish will have you asking for seconds! Butter cauliflower with jasmine rice is a great healthy choice without lacking in flavor.

Ingredients:
  • oz. Onion
  • 3 cloves Garlic
  • 1 tbsp. Ginger, minced
  • 1 head Cauliflower
  • 1 tbsp. Olive Oil
  • 2 tbsp. Butter
  • 1/2 tsp. Ground Cumin
  • 2 tsp. Cayenne Pepper Powder
  • tsp. Red Chili Flakes
  • 2 tbsp. Tomato Paste
  • 15 oz. Canned Tomato Sauce
  • 2 cup Vegetable Stock
  • 1 pinch Salt
  • 1 pinch Ground Black Pepper
  • 2/3 cup Heavy Cream
  • 1⅖ oz. Cilantro, chopped
  • 1 cup Jasmine Rice, Washed
  • 2 cup Water

Remove the core of the cauliflower, cut the rest into bite-size pieces and set aside.

Finely dice onion, garlic, and ginger.

Melt the butter in a large sauté pan with olive oil.

Add onion, garlic and ginger.

Stir frequently, and cook for about 2-3 mins before adding ground cumin, cayenne pepper, and red chili flakes.

After it all combines, add tomato paste, tomato sauce, vegetable stock, salt and black pepper and cook for about 7 mins.

Add the cauliflower to the pan, then add heavy cream and cook for about 8-10 mins.

Chop the cilantro then add to the pan.
