Kale and Chicken Waldorf Salad

Inspired by the summer cookouts with my mom. The classic Waldorf is transformed with the king of greens!

Kale is known for being the leading edge in nutrient-dense vegetables. I shall continue to optimize with the crunchy apple pieces, candied walnuts, and creamy tangy tarragon vinaigrette. We have Slivers of spicy radish and chunks of tender chicken breast. Because I had some leftovers in my fridge.

INGREDIENTS:

  • ¼ cup Whole Egg Mayonnaise Yoghurt, Sour Cream or Other Creamy Alternative)
  • ¼ tsp Sea Salt
  • ½ tbsp Dijon Mustard
  • ½ tbsp Grainy Mustard
  • 1 tbsp Red Wine Vinegar
  • ▶︎ Salad
  • 4 oz Kale
  • ¼ tsp Salt
  • ¼ tsp Ground Black Pepper
  • 2 Radish, sliced
  • 6-7 Candied Walnuts
  • 1 tbsp Golden Raisins
  • 2 oz Chicken Breast (Chunky Cubed)
  • 1 medium Apple, Diced

Mix mayonnaise in a bowl and followed by the vinegar, dijon mustard, grain mustard, and tarragon combine well, check for salt, and set aside.

Place the prepared kale in a bowl, season the leaves and toss. Then add the other ingredients.

Pour in dressing and massage your kale for a few minutes.

Stack your salad on your serving plate. You are good to go.

Massage (rubbing it in your hands) your kale before or after the dressing is put on this will transform your greens from being bitter and tough to a silky sweet tender- light green.
