  • ½ cup White Quinoa
  • 1 Qt Water
  • 【Fruit and Nut Mix】
  • 1 cup Red Cactus Pears or the Roasted Caramelized Figs
  • 1 cup Nut Mix
  • 0.5 tsp Thyme
  • 1 tbsp Brown Sugar
  • ¼ tsp Salt
  • 2 tbsp Sherry Vinegar
  • 1 tsp Olive Oil
  • 【Salad Dressing】
  • ¼ cup Sherry Vinegar
  • 2 tbsp Rice Vinegar
  • ¼ cup Onion, Diced
  • 1 tbsp Honey
  • 1 tsp Dijon Mustard
  • ½ tsp Ground Black Pepper
  • ½ tsp Salt
  • 【For The Kale】
  • 7 oz Kale
  • ½ cup Olive Oil
  • ½ cup Onion, sliced

Lay the bacon slices onto a metal bowl upside down and place the bowl onto an oven tray. Bake the bacon on the bowl for 14 to 17 minutes (depending on the thickness) at 180°C / 350°F degrees.

Make bacon bowl, and bake. After the Bacon is roasted, wait three hours for cooling before you proceed

In a bowl put all the 【Fruit and Nut Mix】ingredents. Mix well, pour them onto an oven tray.

Bake for 12 to 16 minutes at 180°C / 350°F.

In a blender put all the 【Salad Dressing】(except the oil) ingredients, and blend well.

Slowly pour in the oil while the blender keeps going.

Remove the figs and the bacon from the oven. Let both sit for 3 hours. Remove bacon from the upside-down bowl, it should keep the shape of the bowl.

In a bowl, toss the Kale, and red onion, with a dash of the sherry vinaigrette that was recently made.

In a salad bowl place the kale-onion mix at the bottom, then place the bacon that is in a bowl shape on top and fill the bowl-shaped bacon with the roasted figs mixture.
