Kale Tabbouleh Toast

INGREDIENTS:
  • Blanch The Kale
  • 1 Qt Boiling water
  • 1 tsp Ground salt
  • 1 Bunch Dark green kale leaves
  • For The Bread
  • 1 tbsp Extra virgin olive oil
  • 2 slices Sourdough bread
  • hummus
  • 16 oz. Edamame
  • 2 tbsp Water
  • [ Hummus Seasoning ]
  • tsp Cumin powder
  • 1 tsp Corriander powder
  • ½ tsp Salt
  • 2 tbsp Lemon, juiced
  • 2 tbsp Tahini sauce
  • 1 clove Garlic, minced
  • Salad
  • ¼ large Purple onion
  • 2 medium Radish
  • ¼ cup Cucumber, diced
  • ¼ cup Cherry tomatoes
  • ¼ cup Cooked quinoa
  • ¼ cup Bean sprout
  • ¼ cup Chopped parsley
  • Dressing
  • 2 tbsp Extra virgin olive oil
  • 2 tbsp Lemon, juiced
  • tsp Ground salt
  • tsp Ground black pepper
  • 1 stalk Serrano chili

Blanch the kale and edamame in salted water until soft and keep it hot.

Toast sliced bread with olive oil.

With 2 tbsp of the same blanching water blend edamame, mix it multiple times with a spoon to make sure edamame purees evenly.

Add all [Hummus Seasoning] ingredients and mix well.

Toss the kale in a bowl with all the ingredients of【Salad】and 【Dressing】.

Spread 2T of the hummus on the toast. Place ½ c. Of the tabouleh on top of the hummus. Serve and enjoy!
