A quick and simply fantastic mid-week healthy option. The ever-versatile cauliflower makes an excellent fried rice dish replaced by the white rice gives you low- carbs and adds some powerful nutrients to your plate. Served with a popular Japanese style teriyaki chicken. Homemade teriyaki sauce is silky and so simple with no additives and fewer sugars added.

Ingredients:
  • 2 lb. Boneless skinless chicken thighs
  • Marinade
  • 4 tbsp. Reduced sodium soy sauce
  • 2 tbsp. Brown sugar
  • 1 tsp. Powdered ginger
  • 2 tsp. Sesame oil
  • 1 tsp. Baking soda
  • 3 tbsp. Mirin
  • For Stir-fry the Chicken
  • 1 tbsp. Neutral Oil
  • For The Cauliflower
  • 2 tbsp. Neutral oil
  • 1 lb. Riced cauliflower
  • Sauce
  • 2 cup Chicken broth
  • 1/2 cup Low sodium soy sauce
  • 3/4 cup Brown sugar
  • 1 tsp. Powdered ginger
  • 2 tsp. Cornstarch
  • 2 tbsp. Coldwater
  • Stir-fry Cauliflower
  • 2 tbsp. Neutral oil
  • 1/2 cup Yellow onion, small diced
  • 3 cloves Minced garlic
  • 3/4 cup Frozen carrot and peas.
  • 2 tbsp. Reduced sodium soy sauce

Dice chicken into 1 in pieces, combine all ingredients for the【marinade】 in a gallon bag.

Add chicken and shake to coat. Marinate for at least 30 minutes or up to 4 hours.

Preheat oven to 400°F/204°C.

Toss cauliflower in oil and place on a parchment-lined sheet tray.

Cook 6-8 minutes until slightly tender and golden brown.

Combine all【Sauce】ingredients to a simmer.

In a large saute pan, heat oil over medium heat. Add onion and cook for 2 minutes.

Add garlic and ginger, one more minute.

Add cauliflower, frozen carrot, frozen peas, and reduced-sodium soy sauce. Toss to combine and serve warm

Drain and pat the chicken dry.

Over medium-high heat, warm a large sauté pan. Add olive oil with chicken and work in batches cook until cooked through. Reserve chicken on the side.
